Mezcal

The word Mezcal derives from the indigenous Nahuatl word mexcalli, meaning oven cooked maguey. The drink spans generations, referring to the fermentation and distillation of any species of agave. In fact, tequila is a type of mezcal!  The complex flavor profile of Mezcal depends on the environment and region of where it is grown and produced; ranging in flavor from smoky and earthy to sweet and smooth.

According to historians, mezcal has been enjoyed and exploited for centuries in regions of Mexico where agave plants are grown. Today, the highest production of mezcal is in Oaxaca, though many regions also make the spirit. Its origins of production are highly debated, with many pueblos claiming to be the origin of mezcal; and at this point, they are all correct!

Recently, San Luis de la Paz, municipality of Guanajuato, joined the states of Guerrero, Durango, San Luis Potosi, Zacatecas and some regions of Oaxaca, Tamaulipas, Michoacán and Guanajuato, as a zone of denomination of origin of mezcal.
